Pineapple chicken is one of those recipes I never imagined I'd fall in love with. Probably because a part of me was yet to discover how good sweet chicken recipes can be. Also because I'm a stubborn fan of spicy chicken recipes. In fact, it didn't take long to fall in love with this dish since the recipe is absolutely yummy! And there's jusr something charming about having a meal from a pineapple, right? It's not your regular dinner, and gives you the vibes of a restaurant on a tropical beach. All from your own dining room table!

Chicken breast (400g)
Garlic cloves (2)
Salt (to taste)
Pepper (to taste)
Olive oil (2 tbsp)
Cashews (1/2 cup)
Bell pepper (1)
Sesame seeds (2 tsp)
Sweet chili sauce (4 tbsp)
Brown rice (1 cup)
Hollow out the pineapple and save the pineapple pieces for use.
2. Cut the chicken into small cubes. Also, slice the bell peppers and finely chop garlic.
3. In a medium sized saucepan cook the garlic, chicken and bell peppers on medium high heat. Add sweet chili sauce, salt and pepper to taste. Stir every few minutes and continue cooking for 12-15 minutes until ready. Once almost ready, add cashews and cook for additional 1 minute.
4. Boil rice according to package instructions.
5. Serve by placing the rice and chicken inside the hollowed pineapple. Your meal is now ready! Enjoy!
