Protein-Packed Ramen Bowls


I've always been fond of Asian cuisine, so, every time I'm bored of my usual recipes I turn to Asian recipes for inspiration. I think we all love an occasional change in taste buds, and Asian recipes provide a great contrast to regular European cuisine. Today we're sharing with you of the most popular Asian recipes, with some simplification and modification - beef ramen bowls. It's also really easy to switch up the beef for other ingredients of your preference, like pork or vegetarian ramen bowl. Since this recipe is very well balanced and high in protein, it's one of our favorite post-workout meals.


Ingredients


Ingredients for 4 servings:


Thin sliced beef (600 g)

Garlic (1.5 cloves)

Ginger (15 g)

Brown sugar (1 tsp)

White vinegar (2 tsp)

Barbecue sauce (1 tsp)

Soy sauce (1/4cup)

Fish sauce (1/2 tsp)

Chili flakes (1/2 tsp)

Eggs (4)

Egg noodles (320 g)

Carrots (3 medium sized)

Cabbage (120 g)

Green onions (1)

Beef stock cubes (according to package instructions)

Sliced red chili, to serve

Sesame seeds, to serve


Method

  1. In a large saucepan, add beef stock cubes to water. Add soy sauce, finely grated ginger and garlic, fish sauce. Bring to boil. Drizzle some sesame oil and add finely chopped green onions.

  2. In a frying pan, cook the thinly sliced beef with soy sauce, grated ginger and garlic, brown sugar, white vinegar. Add salt and chili flakes to taste. Cook on medium heat until meat is tender. Cook thinly sliced carrots and cabbage for another 5-8 minutes.

  3. Meanwhile, boil eggs for 8-10 minutes depending on preference of medium or hard boiled egg. Remove and place into ice bath. Peel under cold water and split into halves.

  4. In the same boiling water, cook the egg noodles according to instructions and drain water. Add a bit of olive oil to prevent the noodles from sticking together.

  5. Add portions of noodle, soup, beef, vegetables, and eggs in the bowl. Enjoy as it is, or garnish with sesame seeds, chili slices and coriander. Ready to serve!
